Leek Sauce

Serves 2

1 Leek
Half Pint Soya Milk (normal milk can be used)
1 Tablespoon Vegetable Oil
1 Tablespoon Plain Flour
1 Teaspoon Dried Mixed Herbs
Pasta to Serve or pour sauce over vegetables or Quorn as a sauce.

1. Slice off roots and top of leek and cut in half. Wash to remove any soil and slice up.
2. Heat oil in a pan, and soften leeks.
3. Add more oil until there is about 1 tablespoon again and then add the plain flour. Stir over a low heat to combine the oil and flour.
4. Slowly add the milk stirring all the time, then add the mixed herbs.
5. Increase the heat and bring the sauce to a simmer stirring regularly.
6. Once the sauce has thickened serve immediately.
